Huntley Taverne is named after the area in Summit that was once known as Huntley. The Taverne with an “e” comes from the French “Taverne,” which was used in an establishment that predated the restaurant, a wine shop that served meals and charcuterie. Part of the Harvest Restaurant group, Huntley Taverne offers a casual fine dining experience and classic seasonal menu. Its wine list features 250 bottles and its interior offers two stone fireplaces. The restaurant is a teaching kitchen that encourages creativity and passion for good food grown locally.
Chef Bio: William Hendra, executive chef
Chef Hendra has been with Harvest Restaurants since 1997, when Trap Rock Brewery opened. There he worked with chef Bruce Johnson, whom he had previously worked with, as sous chef, at Restaurant 28 in Montclair. A graduate of The Culinary Institute of America, chef Hendra has also worked at Restaurant Luxe in Manhattan and Davios in Boston. The success of Trap Rock fueled the opening of Huntley Taverne, where chef Hendra was the opening chef. He led the kitchen for 10 years and now oversees both Huntley Taverne and Trap Rock Brewery.
Chef Lauren Owens, chef de cuisine
Lauren Owens has been cooking for 12 years, three of which have been for Harvest Restaurants. She was trained at Middlesex County College where she earned her degree in culinary arts. Her resume also includes the Dining Room at the Hilton Short Hills, Camaje Bistro, and Blue Hill NYC. Chef Owens has been a major catalyst in Huntley’s move to farm-to-table cuisine. (Chef Hendra often refers to Ms. Owens as “The Seasonal Police.”) She teaches culinary skills at Middlesex County College and prides herself in the fact the Huntley is a teaching kitchen.
