On working with Zone 7:
“We work with Zone 7 to ensure that our students have the opportunity to experience working with some local ingredients. Additionally, explaining and using these local ingredients is imperative to the students’ understanding of local produce seasons and creating a seasonal menu – which has become a long-term trend with what appears to be no end.
Mikey and the Zone 7 team deliver fresh produce from local farms that we are excited to see when it arrives. Freshness and seasonality make a huge difference in the three main culinary elements – appealing to the eye (looks good), wonderful aromas (smells good) and tremendous flavors (tastes good).”
