Nomad Pizza began as a traveling food truck. Spurred by a novel idea, owners Tom Grim and Stalin Bedon bought and restored a 1949 REO Speedwagon, flipping a pizza oven on its back in the process. Still operating, the root beer and vanilla colored truck is a full-service pizzeria on wheels.

The truck grabbed people's attention and the pizza held it. Nomad makes Neopolitan style pies that cook in less than two minutes, acquiring its signature taste in a wood-burning oven imported from Italy that can reach upward of 1,000 degrees.

Nomad's pizza quickly became a contender for the best in New Jersey. The truck was so successful that Grim and Bedon opened a brick-and-mortar BYOB restaurant in Hopewell (A second restaurant, in Philadelphia, opened in February 2012.) The menu, like the pizza, is sparse, focusing on simple, high-quality ingredients. In warm weather the cozy restaurant opens its patio, allowing diners to eat while overlooking Nomad's garden. Built by Peter Soderman, the garden is functional, growing herbs used in the restaurant, and beautiful, serving as an art attraction in the middle of town.
